Description

A cozy and forgiving tater tot casserole that combines lean ground beef, veggies, and a creamy filling topped with crispy tater tots. Perfect for weeknight dinners and potlucks.


Ingredients

  • 32 ounces frozen tater tots
  • 1 pound lean ground beef
  • 1/2 white onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons Worcestershire sauce
  • 1/3 cup sour cream
  • 1 (10-ounce) can condensed cheddar cheese soup
  • 1 (10-ounce) can cream of mushroom or chicken soup
  • 2 cups shredded cheddar cheese, divided
  • 1 (15.2-ounce) can corn, drained
  • 1 (14.5-ounce) can green beans, drained

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch baking dish.
  2. In a skillet over medium-high heat, brown the ground beef with onion, garlic powder, salt, pepper, and Worcestershire sauce.
  3. Drain any excess grease from the skillet.
  4. In a large bowl, mix the cooked beef mixture with sour cream, cheddar cheese soup, cream of mushroom or chicken soup, corn, green beans, and 1 cup of cheddar cheese.
  5. Spread the beef mixture evenly in the baking dish.
  6. Arrange frozen tater tots in a single layer on top of the mixture.
  7. Bake for 50 minutes until the tater tots are golden brown and filling is bubbling.
  8. Sprinkle the remaining cheddar cheese over the tater tots and bake for another 5 minutes until melted.
  9. Let the casserole rest for 5 to 10 minutes before serving.

Notes

For best results, use frozen tater tots directly from the bag and avoid overcrowding the dish. Resting the casserole before serving helps it set better.
