A warm bowl of comfort featuring savory beef, crispy sweet potatoes, and a drizzle of spicy honey and creamy cottage cheese.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp neutral oil
  • 1/2 tsp cinnamon (optional)
  • 1 lb ground beef (lean preferred)
  • 2 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 2 cups cottage cheese
  • 2 avocados, cubed or sliced
  • 4 tbsp hot honey (or to taste)

Instructions

  1. Toss the sweet potato cubes in the oil and season generously with salt and pepper. Sprinkle with the cinnamon, if using.
  2. Air fry the sweet potatoes at 400°F for 10-15 minutes until golden and cooked through, shaking halfway for even crispiness.
  3. Cook the ground beef in a skillet over medium-high heat, breaking up the beef and stirring in the tomato paste and taco seasoning until browned, about 7-10 minutes.
  4. Assemble the bowls by dividing the sweet potatoes and ground beef evenly. Top with cottage cheese and avocados, then drizzle with hot honey.

Notes

Ensure sweet potatoes are cut evenly for proper cooking. For quicker assembly, use pre-cooked or frozen sweet potatoes. Adjust taco seasoning to your taste.
