Delicious oven-baked Starbucks egg bites packed with protein and creamy texture, perfect for meal prep.

- 9 large eggs
- 1 and 1/2 cups cottage cheese
- 1 tsp salt
- 6 strips cooked bacon (or turkey bacon)
- 2/3 cup shredded gruyere cheese
Instructions
- Preheat your oven to 350°F and spray a 12-slot muffin tin with spray oil.
- In a blender, add eggs, cottage cheese, and salt, blending until smooth.
- Cut each bacon strip in half and place half a strip in each muffin slot.
- Sprinkle shredded gruyere cheese atop the bacon in the muffin pan.
- Pour the egg mixture evenly into the muffin slots, filling them just below the rim.
- Prepare a steam bath by placing a baking sheet on the bottom rack of the oven and pouring boiling water onto it.
- Place the muffin tin on the middle rack and bake for 25 minutes.
- Once baked, let the egg bites cool slightly before removing them from the tin.
Notes
For extra flavor, add chopped herbs or veggies. Ensure you use fresh eggs for the best texture.
