A hearty and vibrant skillet dish combining lean ground beef and sweet potatoes, rich in vitamins and flavor.
Ingredients

- 1/2 tbsp avocado oil (or olive oil)
- 1 lb lean ground beef (96% lean)
- 5 cloves garlic (minced)
- 2 medium sweet potatoes (diced)
- 1 small white onion (diced)
- 1 red bell pepper (diced)
- 1 small jalapeño (diced)
- 1 packet low sodium taco seasoning (divided)
- 1 can fire roasted diced tomatoes (14.5 oz)
- 1 can green chilis (4 oz, optional)
- 1/4 cup beef stock (or water)
- 1 lime (juiced)
- 3/4 cup lite shredded Mexican cheese
- 3 tbsp fresh cilantro (diced)
- Sliced tomatoes, avocado, salsa, Greek yogurt, queso, tortilla chips (for serving)
- Jalapeño Crema (optional)
Instructions
- Prepare the vegetables: Dice the white onion, red pepper, and jalapeño; peel and dice sweet potatoes.
- Heat a large skillet over medium heat, add 1/4 tbsp of avocado oil.
- Add diced onion and minced garlic, sauté for 2 minutes until fragrant.
- Add ground beef and half of the taco seasoning, cook for 6-8 minutes until browned.
- Remove cooked beef from the skillet and set aside.
- Add remaining oil, sweet potatoes, canned tomatoes, red pepper, jalapeños, and green chiles to the skillet.
- Stir and pour in the beef stock and remaining taco seasoning; cover and cook for 20 minutes, stirring occasionally.
- Return the meat mixture to the skillet, squeeze lime juice in, and stir to combine.
- Sprinkle shredded cheese and cilantro on top; cover and cook for 3-5 minutes to melt cheese.
- Serve with avocado, salsa, and tomato slices over shredded lettuce or with rice.
Notes
For extra creaminess, mix in some cream cheese just before serving. Customize toppings to your preference.
