Description

A hearty and vibrant skillet dish combining lean ground beef and sweet potatoes, rich in vitamins and flavor.


Ingredients

  • 1/2 tbsp avocado oil (or olive oil)
  • 1 lb lean ground beef (96% lean)
  • 5 cloves garlic (minced)
  • 2 medium sweet potatoes (diced)
  • 1 small white onion (diced)
  • 1 red bell pepper (diced)
  • 1 small jalapeño (diced)
  • 1 packet low sodium taco seasoning (divided)
  • 1 can fire roasted diced tomatoes (14.5 oz)
  • 1 can green chilis (4 oz, optional)
  • 1/4 cup beef stock (or water)
  • 1 lime (juiced)
  • 3/4 cup lite shredded Mexican cheese
  • 3 tbsp fresh cilantro (diced)
  • Sliced tomatoes, avocado, salsa, Greek yogurt, queso, tortilla chips (for serving)
  • Jalapeño Crema (optional)

Instructions

  1. Prepare the vegetables: Dice the white onion, red pepper, and jalapeño; peel and dice sweet potatoes.
  2. Heat a large skillet over medium heat, add 1/4 tbsp of avocado oil.
  3. Add diced onion and minced garlic, sauté for 2 minutes until fragrant.
  4. Add ground beef and half of the taco seasoning, cook for 6-8 minutes until browned.
  5. Remove cooked beef from the skillet and set aside.
  6. Add remaining oil, sweet potatoes, canned tomatoes, red pepper, jalapeños, and green chiles to the skillet.
  7. Stir and pour in the beef stock and remaining taco seasoning; cover and cook for 20 minutes, stirring occasionally.
  8. Return the meat mixture to the skillet, squeeze lime juice in, and stir to combine.
  9. Sprinkle shredded cheese and cilantro on top; cover and cook for 3-5 minutes to melt cheese.
  10. Serve with avocado, salsa, and tomato slices over shredded lettuce or with rice.

Notes

For extra creaminess, mix in some cream cheese just before serving. Customize toppings to your preference.
