- 2 boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 cup sweet corn, fresh or frozen
- 4 cups romaine lettuce, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup chipotle-lime dressing
Instructions
- Season chicken breasts with salt, pepper, and smoked paprika, then grill over medium-high heat for 6-7 minutes per side until cooked through.
- Let chicken rest for a few minutes before slicing.
- In a large bowl, toss together black beans, sweet corn, romaine, avocado, and cherry tomatoes gently.
- Add sliced chicken to the bowl.
- Drizzle chipotle-lime dressing over the salad and toss gently to coat.
- Serve immediately or refrigerate (keeping dressing separate) for later.
Notes
For best results, keep the dressing separate until ready to serve to maintain freshness. It can also be layered in a wrap or used as a topping for quesadillas.
