Delicious and easy slow cooker tacos featuring tender chipotle-honey chicken, perfect for busy weeknights.

- 1 ½ pounds boneless, skinless chicken thighs
- 3 tablespoons honey
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon ground cumin
- 1 teaspoon kosher salt
- 1 to 4 chipotles in adobo, finely chopped
- 2 tablespoons adobo sauce
- 1 (15-ounce) can black beans, rinsed and drained
- Juice of 1 lime
- Warmed tortillas, for serving
- Pickled onion, for serving
- Sliced or cubed avocado, for serving
Instructions
- Combine chicken, honey, onion powder, garlic powder, cumin, salt, chipotles, and adobo sauce in a slow cooker. Stir well.
- Cook on low for 3 to 5 hours, checking for tenderness to shred the chicken.
- Once cooked, shred the chicken in the sauce using two forks.
- Stir in black beans and lime juice, cover and heat through for about 5 minutes.
- Serve in tortillas topped with pickled onion and avocado.
Notes
For added flavor, sear chicken thighs before slow cooking. You can also add lime zest before serving for a burst of freshness.
