Description

Delicious and easy slow cooker tacos featuring tender chipotle-honey chicken, perfect for busy weeknights.


Ingredients

Scale
  • 1 ½ pounds boneless, skinless chicken thighs
  • 3 tablespoons honey
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 to 4 chipotles in adobo, finely chopped
  • 2 tablespoons adobo sauce
  • 1 (15-ounce) can black beans, rinsed and drained
  • Juice of 1 lime
  • Warmed tortillas, for serving
  • Pickled onion, for serving
  • Sliced or cubed avocado, for serving

Instructions

  1. Combine chicken, honey, onion powder, garlic powder, cumin, salt, chipotles, and adobo sauce in a slow cooker. Stir well.
  2. Cook on low for 3 to 5 hours, checking for tenderness to shred the chicken.
  3. Once cooked, shred the chicken in the sauce using two forks.
  4. Stir in black beans and lime juice, cover and heat through for about 5 minutes.
  5. Serve in tortillas topped with pickled onion and avocado.

Notes

For added flavor, sear chicken thighs before slow cooking. You can also add lime zest before serving for a burst of freshness.
