Description

A warm and comforting slow cooker dish featuring tender chicken simmered in zesty salsa, served over rice with toppings like avocado, cheese, and black beans.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa (your favorite brand or homemade)
  • 1 cup long-grain white rice
  • 2 ripe avocados, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (15 oz) black beans, drained and rinsed
  • Cilantro lime vinaigrette, for drizzling

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker.
  2. Pour the salsa over the chicken, covering it completely.
  3. Set your slow cooker to low for 6 to 8 hours or high for 3 to 4 hours until the chicken is tender.
  4. In the last hour, add the rice to the slow cooker.
  5. Shred the chicken in the slow cooker and mix together with the rice.
  6. Serve the mixture in bowls topped with avocado, cilantro, cheese, and black beans.
  7. Drizzle with cilantro lime vinaigrette before enjoying.

Notes

For extra flavor, marinate the chicken in salsa a few hours before cooking. This lets the flavors penetrate better.
