Description

A comforting classic soup that combines Italian sausage, potatoes, and nutritious kale, perfect for chilly days.


Ingredients

Scale
  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 34 medium potatoes, peeled and diced
  • 4 cups kale, washed and chopped
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried thyme or Italian seasoning (optional)
  • Grated Parmesan cheese for serving (optional)
  • Crusty bread for serving (optional)

Instructions

  1. Prepare the sausage by removing the casing if using sausage links and crumble it into pieces.
  2. In a large pot, heat the olive oil over medium heat, then add the sausage and cook until browned (5-7 minutes).
  3. Add the chopped onion and cook until translucent (about 5 minutes), then stir in the minced garlic and cook for another minute.
  4. Add red pepper flakes and thyme/seasoning if using.
  5. Pour in the chicken broth and bring to a boil, scraping the pot for flavor.
  6. Add the diced potatoes and simmer until tender (15-20 minutes).
  7. Stir in the chopped kale, cooking until wilted (about 5 minutes).
  8. Slowly add the cream while stirring, being careful not to boil.
  9. Season with salt and pepper to taste, serve hot with optional Parmesan and bread.

Notes

For a brighter flavor, add a splash of lemon juice before serving.
