- 1 pound Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 3–4 medium potatoes, peeled and diced
- 4 cups kale, washed and chopped
- 1 cup heavy cream or half-and-half
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon dried thyme or Italian seasoning (optional)
- Grated Parmesan cheese for serving (optional)
- Crusty bread for serving (optional)
Instructions
- Prepare the sausage by removing the casing if using sausage links and crumble it into pieces.
- In a large pot, heat the olive oil over medium heat, then add the sausage and cook until browned (5-7 minutes).
- Add the chopped onion and cook until translucent (about 5 minutes), then stir in the minced garlic and cook for another minute.
- Add red pepper flakes and thyme/seasoning if using.
- Pour in the chicken broth and bring to a boil, scraping the pot for flavor.
- Add the diced potatoes and simmer until tender (15-20 minutes).
- Stir in the chopped kale, cooking until wilted (about 5 minutes).
- Slowly add the cream while stirring, being careful not to boil.
- Season with salt and pepper to taste, serve hot with optional Parmesan and bread.
Notes
For a brighter flavor, add a splash of lemon juice before serving.
