  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes until golden, then cool completely.
  3. Peel and slice apples, mixing with brown sugar, cinnamon, and flour. Layer over the cooled crust.
  4. Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
  5. Pour cheesecake mixture over the apples, smooth with a spatula.
  6. Bake for 60 to 70 minutes until the center is slightly wobbly. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  7. For the caramel, melt 1 cup sugar in a saucepan until amber. Stir in 6 tbsp butter, then slowly pour in heavy cream while stirring. Add sea salt.
  8. Drizzle cooled caramel over the cheesecake before serving.

Notes

For a creamier texture, ensure cream cheese is at room temperature. Use Honeycrisp or Granny Smith apples for balance.
