- 3 large eggs

- 3 cups peeled and sliced apples
- 1/4 cup brown sugar

- 2 tbsp all-purpose flour

- 1 tsp sea salt (for caramel)
Instructions
- Preheat your oven to 325°F (163°C).
- Mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes until golden, then cool completely.
- Peel and slice apples, mixing with brown sugar, cinnamon, and flour. Layer over the cooled crust.
- Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
- Pour cheesecake mixture over the apples, smooth with a spatula.
- Bake for 60 to 70 minutes until the center is slightly wobbly. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
- For the caramel, melt 1 cup sugar in a saucepan until amber. Stir in 6 tbsp butter, then slowly pour in heavy cream while stirring. Add sea salt.
- Drizzle cooled caramel over the cheesecake before serving.
Notes
For a creamier texture, ensure cream cheese is at room temperature. Use Honeycrisp or Granny Smith apples for balance.
