Description

A comforting one-pan dinner featuring shredded chicken, zesty salsa verde, and beans, ready in under 30 minutes.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • 15.5 oz salsa verde
  • 1 can (4 oz) diced green chiles
  • 1 cup white long grain rice
  • 2 cups chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 1 can black beans, rinsed and drained
  • 1/2 cup roasted corn
  • 1 tsp chili powder
  • 1 tsp sea salt
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Dash of black pepper
  • 3 tbsp cilantro
  • Optional toppings: avocado, red pepper flakes

Instructions

  1. In a large skillet, add olive oil and heat it over medium heat.
  2. Add minced garlic and diced onion, sautéing until fragrant and the onion becomes translucent.
  3. In a small bowl, mix together your spices. Add them to the skillet, letting those comforting flavors infuse the garlic and onion.
  4. Toss in the drained black beans, roasted corn, shredded chicken, diced green chiles, chicken broth, salsa verde, and rice. Stir until all is well combined.
  5. Bring the mixture to a boil for 2-3 minutes. Then, reduce the heat, cover the skillet, and let it simmer for 15 minutes.
  6. When the timer goes off, check if the rice is fluffy and has soaked up all the liquid. If needed, give it a few more minutes.
  7. Once done, turn off the heat and sprinkle shredded cheese on top. Cover the skillet for another 2-3 minutes, allowing the cheese to melt beautifully.
  8. Finish by topping with fresh cilantro, avocado, and a sprinkle of red pepper flakes. Enjoy the explosion of flavors!

Notes

Short on time? Use pre-cooked chicken. For extra veggies, add bell peppers or zucchini. A dollop of sour cream adds creaminess.
