Description

Delightful homemade pretzels with a warm, soft texture, savory Parmesan, and fresh rosemary, filled with gooey mozzarella.


Ingredients

Scale
  • 1 1/2 cups warm water (about 110°F)
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh rosemary
  • 1 cup shredded mozzarella cheese
  • 1/2 cup baking soda
  • 1 egg (for egg wash)
  • Coarse sea salt (for topping)

Instructions

  1. In a large bowl, combine warm water, sugar, and salt. Sprinkle the yeast on top and let it sit for about 5 minutes until frothy.
  2. Add flour, Parmesan cheese, and rosemary to the yeast mixture. Mix until a dough forms, then knead for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
  4. Preheat the oven to 450°F (230°C).
  5. Turn the dough onto a floured surface and divide it into 8 equal pieces. Roll each piece into a rope and shape into a pretzel.
  6. In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel for 30 seconds, then remove and place on a baking sheet.
  7. Brush each pretzel with beaten egg and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until golden brown.
  9. Once cooled slightly, cut a small slit on top and stuff each pretzel with mozzarella cheese. Serve warm.

Notes

For a unique flavor, experiment with different cheeses and seasonings. Pair pretzels with cheese dips or mustards for an excellent snack.
