Description

Crispy on the outside and tender on the inside, these roasted garlic butter Parmesan potatoes are a go-to side dish that pairs well with various proteins.


Ingredients

  • 2 pounds golden potatoes, scrubbed and cut into 1-inch pieces
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese, packed
  • 1 teaspoon kosher salt, adjust to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano or 1 tablespoon fresh chopped rosemary (optional)
  • 1 tablespoon chopped fresh parsley (optional)
  • Lemon wedges (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the golden potatoes into bite-sized pieces.
  3. Melt the butter with the minced garlic in a small saucepan over low heat.
  4. Toss the potatoes in a large bowl with the garlic butter, olive oil, salt, pepper, and grated Parmesan cheese until evenly coated.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Roast in the oven for 25 to 30 minutes, stirring once halfway through.
  7. Garnish with fresh parsley and a squeeze of lemon if using, then serve warm.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat in a 375°F oven to restore crispness.
