Description
Delicious and savory quinoa feta patties that make a perfect snack or meal. Packed with plant protein and fresh herbs, they are crispy on the outside and tender inside.

- 2 1/2 cups cooked quinoa, at room temperature
- 5 large eggs, lightly beaten
- 1/2 teaspoon fine-grain sea salt
- 1/3 cup finely chopped fresh chives
- 1/3 cup finely chopped fresh dill
- 1 cup finely chopped kale
- 1 yellow or white onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 teaspoon toasted cumin
- 1 teaspoon baking powder
- 1 cup bread crumbs, plus more if needed
- Water or a bit of flour, if needed
- 1/3 cup crumbled feta
- 1 tablespoon extra-virgin olive oil or clarified butter
- Sesame seeds, for coating (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil it.
- If using raw onion, sauté it in a tablespoon of oil over medium heat until translucent.
- In a large bowl, combine the cooked quinoa, beaten eggs, and salt; mix until evenly moistened.
- Stir in chives, dill, kale, cooled onion, garlic, and cumin until well distributed.
- Add baking powder and bread crumbs; stir and let sit for 3 to 5 minutes.
- Gently fold in the crumbled feta until just combined.
- Use about 1/2 cup of the mixture per patty and form twelve 1-inch thick patties.
- If baking, arrange patties on the prepared sheet, brush tops with olive oil, and sprinkle sesame seeds if using. Bake for 20 minutes, carefully flip each patty, and bake for another 5 minutes.
- If pan-frying, heat oil in a skillet over medium-low and cook patties for 7 to 10 minutes per side until golden brown.
- Transfer cooked patties to a wire rack to cool briefly before serving.
Notes
These patties can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months. Reheat in the oven or skillet for best texture.
