Description

A delightful baked breakfast casserole made with stale bread and fresh blueberries, perfect for a cozy family breakfast or festive brunch.

Ingredients

Scale
  • 6 slices of stale bread
  • 2 cups fresh blueberries
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Powdered sugar for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a greased casserole dish, layer the slices of bread and sprinkle the blueberries on top.
  3. In a bowl, whisk together the eggs, milk, sugar, vanilla, and cinnamon. Pour the egg mixture evenly over the bread and blueberries.
  4. Let it sit for 15-20 minutes to soak.
  5. Bake in the preheated oven for 35-45 minutes until golden brown.
  6. Serve warm with a dusting of powdered sugar, if desired.

Notes

For extra richness, substitute half-and-half for milk. Assemble the casserole the night before for convenience. Use day-old bread for best results.
