Description

A comforting ground beef casserole filled with savory spices and melted cheese, perfect for a family dinner.


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 cup diced orange bell pepper
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon Montreal Steak seasoning or Magic Dust seasoning
  • 16 ounces tomato sauce
  • 10 ounces can of Red Gold Diced Tomatoes & Green Chiles
  • 1 1/2 teaspoon dried oregano
  • 2 teaspoons chili powder
  • 2 cups frozen corn
  • 2 ounces shredded Mexican 4 Cheese blend
  • 1 1/2 cups dried macaroni style pasta cooked al dente
  • 1 cup shredded Mexican 4 Cheese blend
  • Sliced green onions for garnish

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. Spray a two-quart casserole dish with cooking spray.
  3. In a large skillet, brown the ground beef with onions, bell pepper, and red pepper flakes until the meat is no longer pink, about 5–7 minutes.
  4. Season with Magic Dust or steak seasoning to taste.
  5. Add the tomato sauce, diced tomatoes, oregano, and chili powder; bring to a gentle boil.
  6. Reduce heat and simmer for 15-20 minutes.
  7. Add the frozen corn and simmer for a few more minutes until heated through.
  8. Remove from heat, stir in 2 ounces of shredded cheese until melted.
  9. Fold in the cooked pasta until evenly combined.
  10. Pour into the prepared casserole dish and top with the remaining cheese.
  11. Bake uncovered for 20-30 minutes or until the cheese is browned and bubbly.
  12. Garnish with sliced green onions just before serving.

Notes

Ensure pasta is al dente to retain texture after baking.
