Delicious Greek Turkey Meatballs that are lean, flavorful, and perfect for weeknight dinners. Packed with veggies and Mediterranean herbs, these meatballs will delight the whole family.
Ingredients

- 1.25 lbs 93% lean ground turkey
- 1 cup grated zucchini (liquid squeezed out well)
- 2 slices whole wheat or gluten-free bread, wet with water and excess squeezed out
- 1/4 cup seasoned whole wheat breadcrumbs or gluten-free panko
- 1 large egg
- 3 cloves garlic, minced
- 1/4 red onion, grated
- 2 tbsp fresh oregano, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp chopped fresh spearmint
- 1 tsp kosher salt
- Fresh black pepper to taste
- Olive oil cooking spray
Instructions
- Wet the bread with water and squeeze out the excess.
- Tear the bread into small pieces and place in a large bowl.
- Combine turkey, egg, zucchini, breadcrumbs, garlic, onion, mint, parsley, oregano, salt, and pepper in the bowl.
- Mix thoroughly with hands.
- Using a 1/4 cup measure, form each meatball slightly flattening them into patties.
- Refrigerate meatballs for 30 minutes to firm up.
- In a nonstick frying pan, spray with olive oil and cook over low heat, turning halfway, about 5 to 6 minutes on each side.
- Alternatively, bake in a preheated oven at 350°F for 20-25 minutes.
- For grilling, clean the grill and spray with oil, cooking on low until cooked through, about 5 minutes on each side.
Notes
These meatballs are great served over rice or in pita pockets. Pair with tzatziki for a delicious meal.
