Description

Delicious Greek Turkey Meatballs that are lean, flavorful, and perfect for weeknight dinners. Packed with veggies and Mediterranean herbs, these meatballs will delight the whole family.


Ingredients

Scale
  • 1.25 lbs 93% lean ground turkey
  • 1 cup grated zucchini (liquid squeezed out well)
  • 2 slices whole wheat or gluten-free bread, wet with water and excess squeezed out
  • 1/4 cup seasoned whole wheat breadcrumbs or gluten-free panko
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/4 red onion, grated
  • 2 tbsp fresh oregano, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp chopped fresh spearmint
  • 1 tsp kosher salt
  • Fresh black pepper to taste
  • Olive oil cooking spray

Instructions

  1. Wet the bread with water and squeeze out the excess.
  2. Tear the bread into small pieces and place in a large bowl.
  3. Combine turkey, egg, zucchini, breadcrumbs, garlic, onion, mint, parsley, oregano, salt, and pepper in the bowl.
  4. Mix thoroughly with hands.
  5. Using a 1/4 cup measure, form each meatball slightly flattening them into patties.
  6. Refrigerate meatballs for 30 minutes to firm up.
  7. In a nonstick frying pan, spray with olive oil and cook over low heat, turning halfway, about 5 to 6 minutes on each side.
  8. Alternatively, bake in a preheated oven at 350°F for 20-25 minutes.
  9. For grilling, clean the grill and spray with oil, cooking on low until cooked through, about 5 minutes on each side.

Notes

These meatballs are great served over rice or in pita pockets. Pair with tzatziki for a delicious meal.
