Description

A hearty and delicious crock pot soup with Italian sausage, potatoes, and cream, perfect for cozy evenings.


Ingredients

Scale
  • 1 pound ground Italian sausage
  • 4 russet potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1 tablespoon minced garlic
  • 1/2 onion (chopped)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup heavy whipping cream
  • 1/4 cup parmesan cheese (for serving)

Instructions

  1. Brown the ground sausage in a skillet over medium heat, then drain any remaining fat.
  2. Add the browned sausage to a crock pot.
  3. Place in the minced garlic, onion, diced potatoes, salt, pepper, and chicken broth in the crock pot. Stir to combine.
  4. Cover the crock pot and cook on low for 5-6 hours or on high for 3 hours.
  5. Stir in the heavy whipping cream, then cover and cook on low for an additional 10-15 minutes.
  6. Serve warm topped with parmesan cheese.

Notes

For a thicker soup, mash some of the potato chunks against the side of the crock pot before serving.
