A hearty and delicious crock pot soup with Italian sausage, potatoes, and cream, perfect for cozy evenings.
Ingredients

- 1 pound ground Italian sausage
- 4 russet potatoes (peeled and diced)
- 4 cups chicken broth
- 1 tablespoon minced garlic
- 1/2 onion (chopped)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup heavy whipping cream
- 1/4 cup parmesan cheese (for serving)
Instructions
- Brown the ground sausage in a skillet over medium heat, then drain any remaining fat.
- Add the browned sausage to a crock pot.
- Place in the minced garlic, onion, diced potatoes, salt, pepper, and chicken broth in the crock pot. Stir to combine.
- Cover the crock pot and cook on low for 5-6 hours or on high for 3 hours.
- Stir in the heavy whipping cream, then cover and cook on low for an additional 10-15 minutes.
- Serve warm topped with parmesan cheese.
Notes
For a thicker soup, mash some of the potato chunks against the side of the crock pot before serving.
