Description

Protein-packed cottage cheese egg bites that are creamy, cheesy, and versatile, perfect for meal prepping and customizing with your favorite ingredients.


Ingredients

  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/3 cup cottage cheese (4 oz or 110 grams)
  • 1/3 cup grated Cheddar cheese (1.5 oz or 40 grams)
  • 1.5 oz diced ham (3540 grams)
  • 1.5 tablespoons chopped spring onions (scallions)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. In a blender, blend the eggs, salt, cottage cheese, and Cheddar until smooth.
  3. Pour the mixture into the muffin cups, filling each about halfway or two-thirds.
  4. Add diced ham and green onions to each cup and stir to combine.
  5. Bake for 20 minutes or until set and golden.
  6. Allow to cool in the tin before removing.
