Description

Delicious breakfast burritos packed with eggs, sausage, and crispy tater tots, perfect for meal prep.


Ingredients

Scale
  • 1 lb frozen tater tots (about 3 cups)
  • 1 lb ground turkey or pork breakfast sausage
  • 2 teaspoons olive oil
  • 1 diced bell pepper (about 1 cup)
  • 1/2 small yellow onion, finely diced (about 1/2 cup)
  • 12 large eggs
  • 1 cup shredded cheddar cheese (omit for dairy-free)
  • 10 10-inch burrito size flour tortillas (use gluten-free if needed)

Instructions

  1. Preheat the oven and bake tater tots according to package directions.
  2. In a medium skillet, cook the breakfast sausage until cooked through, about 7 minutes. Remove to a paper towel-lined plate to drain excess fat.
  3. In a large skillet, heat olive oil over medium heat. Add bell pepper and onion, sautéing until tender, about 6 minutes.
  4. In a bowl, whisk the eggs, then pour into the skillet with the veggies, stirring until set, about 3 to 5 minutes.
  5. Gently fold the cooked sausage into the egg mixture and let it cool for 10 minutes.
  6. Microwave the tortillas wrapped in damp paper towels for 15 to 20 seconds.
  7. Scoop 1 cup of the egg mixture into the center of each tortilla, add 4 tater tots and cheese. Fold the sides in and roll tightly.
  8. Wrap each burrito in parchment paper and then in aluminum foil. Label and freeze for up to 3 months.

Notes

These burritos can be enjoyed straight from your hand or plated at the kitchen table. Add fresh fruit or salsa for extra flavor.
