Ingredients

- 2 tablespoons olive oil
- 2 medium onions, minced
- ½ cup chopped chorizo
- 2 cups chopped tomatoes
- ¼ cup red wine
- 2 cloves garlic, minced
- Sea salt and pepper, to taste
- 4 large eggs
- Optional: kalamata olives, minced parsley, feta (for serving)
Instructions
- Heat the oil in a medium-sized skillet over medium-high heat.
- Add the onions and chorizo, cooking for 5-7 minutes until the onion is golden brown, stirring occasionally.
- Reduce the heat to medium, then add tomatoes, red wine, and garlic. Cook until it thickens into a sauce, about 5 minutes, seasoning with salt and pepper to taste.
- Create four wells in the sauce and carefully crack the eggs into them.
- Return the pan to the heat and cook uncovered for 3-5 minutes, until the whites are set and the yolks are still runny.
- Season the eggs and top with olives, parsley, and feta before serving.
Notes
For a creamier texture, add a splash of cream to the sauce before adding the eggs. Watch the eggs closely to avoid overcooking them.
