A delicious and nutritious breakfast casserole featuring a blend of turkey sausage, sweet butternut squash, and nutrient-packed spinach, perfect for busy mornings.


Ingredients

  • 1/2 lb. lean ground turkey sausage
  • 2 tsp. olive oil
  • 2 cups butternut squash, peeled and diced
  • 1/2 red onion, diced
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1/2 tsp. pepper
  • 4 cups spinach, chopped
  • 4 eggs
  • 4 egg whites

Instructions

  1. Preheat the oven to 400 degrees.
  2. Heat a skillet over medium-high heat. Add the sausage and cook until no longer pink, breaking it up as it cooks.
  3. Remove sausage and set aside. In the same pan, add olive oil, then the butternut squash and red onion.
  4. Cook for 8-10 minutes until tender, adding 1-2 tablespoons of water if burning.
  5. Add salt, garlic powder, oregano, and pepper, stirring to distribute the flavors.
  6. Add spinach and cook until wilted, about 1-2 minutes.
  7. Whisk together eggs until frothy. In a baking dish sprayed with cooking spray, combine sausage and butternut squash mixture.
  8. Pour the eggs over the top, ensuring everything is coated.
  9. Bake for 25-30 minutes until eggs are set; a toothpick should come out clean when done.

Notes

For a crispier top, broil the casserole for the last 1-2 minutes. Assemble and refrigerate overnight for stress-free mornings. Make sure to pre-cook the veggies well to avoid a soggy bottom.
