A comforting and easy recipe for Pesto Grilled Cheese, perfect for busy weeknights.
Ingredients

- 2 slices of bread (sourdough, whole wheat, or gluten-free)
- 2 slices of your favorite cheese (sharp cheddar, creamy mozzarella, or melty havarti)
- 2 tablespoons of basil pesto (homemade or store-bought)
- 1 tablespoon of butter (for grilling)
Instructions
- Spread pesto generously on one side of each slice of bread.
- Place one slice of bread, pesto side up, in a skillet over medium heat.
- Stack the cheese on top of the bread.
- Place the second slice of bread on top, pesto side down, forming a sandwich.
- Butter the outside of each slice of bread.
- Grill the sandwich for about 3-4 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, slice in half, and enjoy.
Notes
Pair with tomato soup or a fresh salad. Store leftovers in an airtight container for up to 3 days.
