Description

A comforting and easy recipe for Pesto Grilled Cheese, perfect for busy weeknights.


Ingredients

  • 2 slices of bread (sourdough, whole wheat, or gluten-free)
  • 2 slices of your favorite cheese (sharp cheddar, creamy mozzarella, or melty havarti)
  • 2 tablespoons of basil pesto (homemade or store-bought)
  • 1 tablespoon of butter (for grilling)

Instructions

  1. Spread pesto generously on one side of each slice of bread.
  2. Place one slice of bread, pesto side up, in a skillet over medium heat.
  3. Stack the cheese on top of the bread.
  4. Place the second slice of bread on top, pesto side down, forming a sandwich.
  5. Butter the outside of each slice of bread.
  6. Grill the sandwich for about 3-4 minutes on each side until golden brown and cheese is melted.
  7. Remove from skillet, slice in half, and enjoy.

Notes

Pair with tomato soup or a fresh salad. Store leftovers in an airtight container for up to 3 days.
