- 2 pounds red potatoes
- 3 tablespoons olive oil
- 1.5 cups grated Parmesan cheese (freshly grated)
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs (or mix of basil, oregano, and thyme)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment or a thin layer of oil.
- Wash the red potatoes and cut them into 1 to 1.5 inch pieces.
- In a large bowl, toss the potatoes with 3 tablespoons of olive oil.
- Add garlic powder, dried Italian herbs, salt, and black pepper, and toss again.
- Sprinkle Parmesan cheese over the potatoes and toss gently to coat.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down where possible.
- Roast in the oven for 20 minutes, then flip the potatoes using a spatula.
- Continue roasting for an additional 12 to 18 minutes, until tender and golden.
- Remove from the oven and let rest for 3 minutes; add finishing salt if needed and optionally scatter chopped parsley before serving.
Notes
For best texture, store cooled leftovers in a single layer in the refrigerator.
