- 2.5 lb baby golden potatoes
- 2 tbsp olive oil
- 1.5 tsp ranch seasoning mix
- 0.5 tsp garlic powder
- 0.5 tsp paprika
- 0.25 tsp black pepper
- 0.5 tsp salt (or to taste)
Instructions
- Preheat your oven to 425°F and line a baking sheet with foil or parchment.
- Wash the baby golden potatoes and halve any that are larger than a ping pong ball.
- In a large bowl, combine olive oil, ranch seasoning, garlic powder, paprika, black pepper, and salt; mix until a smooth paste forms.
- Add the halved potatoes to the bowl and toss until they are well coated.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
- Roast in the oven for 25 minutes, then turn the potatoes for even browning.
- Continue roasting for an additional 10 to 15 minutes until golden brown and fork-tender.
- Remove from the oven, let rest for 3 to 5 minutes, then serve warm.
Notes
For optimal results, ensure potato pieces are uniform in size for even cooking. Preheat the baking sheet for a crispier bottom.
