Description

Delightful bites of creamy Oreo cheesecake, perfectly baked with a crunchy Oreo foundation.


Ingredients

  • 16 Oreos
  • 16 ounces cream cheese, softened (2 8-ounce packages)
  • 1/2 cup sugar
  • 2 whole eggs
  • 1 tsp. vanilla extract
  • 3/4 cup large and small Oreo cookie crumbs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake baking pan with 16 paper liners. Nestle one Oreo cookie in the bottom of each liner.
  2. In a large mixing bowl, beat together the softened cream cheese, sugar, eggs, and vanilla extract using an electric mixer for 2-3 minutes until smooth and creamy.
  3. Gently fold in the chopped Oreo cookie crumbs.
  4. Spoon about two tablespoons of the mixture onto each cookie foundation in the cupcake liners and sprinkle more Oreo crumbs on top.
  5. Bake for 14-16 minutes until centers are set but jiggle slightly.
  6. Let cool for at least 30 minutes, then refrigerate for about two hours before serving.

Notes

Top with whipped cream and more Oreo crumbs just before serving. Consider adding espresso powder or chocolate chips for extra flavor.
