One Pan Salmon with Spinach and Orzo

Description

A delicious and nutritious one-pan meal featuring salmon, spinach, and orzo, perfect for a quick weeknight dinner.


Ingredients

  • 4 (6-ounce) salmon fillets, skinned and bones removed
  • 2 teaspoons Cajun or blackened seasoning
  • 6 tablespoons extra virgin olive oil, divided
  • 2 tablespoons unsalted butter
  • 1 large onion, diced
  • 6 cloves garlic, minced
  • 1 1/2 pounds cherry tomatoes, halved
  • 1 pound baby spinach
  • 3 cups low-sodium chicken stock (or water/vegetable stock)
  • 1 tablespoon dried oregano
  • 2 teaspoons fine sea salt
  • 1/2 teaspoon black pepper
  • 1 pound orzo pasta
  • 3 tablespoons lemon juice
  • 1/4 cup minced flat-leaf Italian parsley

Instructions

  1. Heat a large pot or high-walled pan to medium heat with 4 tablespoons of olive oil and the butter.
  2. Pat the salmon pieces dry, season with Cajun spice on both sides, and sear for 3 minutes per side.
  3. Place the salmon on a plate and tent with foil to keep it warm.
  4. In the same pan, add the remaining olive oil, onion with a pinch of salt, and cook until translucent (approximately 5 minutes).
  5. Add the minced garlic and cook until fragrant (about 2 minutes).
  6. Toss in the halved cherry tomatoes, cooking for 5-6 minutes until they start to release their juices.
  7. Add the spinach, oregano, salt, and pepper, and mix well.
  8. Pour in the chicken stock, bring to a boil, then add the orzo and stir well.
  9. Cover, turn the heat to low, and cook for 8 minutes.
  10. Uncover, nestle the salmon back into the orzo, cover again, and cook for another 4-6 minutes.
  11. Remove from heat, mix in lemon juice and parsley, and adjust seasoning as necessary.

Notes

For an extra flavor boost, marinate the salmon in lemon juice and Cajun seasoning for 30 minutes before cooking.
