- 4 Salmon fillets
- 1 can Coconut milk
- 2 tbsp Curry powder
- 4 cloves Garlic, minced
- 2 tbsp Butter
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
- Rice or naan, for serving
Instructions
- Melt the butter in a large pan over medium heat and sauté the minced garlic until fragrant and golden, about one minute.
- Pour in the coconut milk and stir in the curry powder until well combined.
- Gently place the salmon fillets in the pan, skin side down, and season with salt and pepper.
- Cover the pan and cook for 10-15 minutes, checking for doneness until the salmon flakes easily with a fork.
- Plate the curry salmon over rice or with naan and garnish with fresh cilantro.
Notes
For extra flavor, marinate the salmon in lime juice before cooking. Leftovers can be stored in an airtight container for up to three days.
