- 1 large egg
- 2 slices of your favorite bread
- 1/2 ripe avocado
- 1/2 cup cottage cheese
- 1/8 teaspoon paprika (optional)
- 1/8 teaspoon salt (optional)
- 1/8 teaspoon black pepper (optional)
- 1 teaspoon Dijon mustard (optional)
- 1 tablespoon sliced green onion (optional)
- Everything but the bagel seasoning (optional)
- 1 tablespoon hemp seeds (optional)
Instructions
- Hard boil your egg: Place the egg in a medium pot and cover with cold water. Bring the water to a boil, cover, and remove from heat, allowing it to sit for 9-12 minutes. Transfer to ice water to cool, then peel.
- Toast your bread using your preferred method until golden.
- In a medium bowl, combine the avocado, cottage cheese, and hard-boiled egg. Mash together until smooth, leaving some lumps for texture.
- Add paprika, salt, black pepper, Dijon mustard, and green onion, mixing until combined.
- Assemble your toast: Spread half of the mixture on each slice of bread. Top with everything but the bagel seasoning and hemp seeds.
- Enjoy immediately!
Notes
Use ripe avocados for the best texture and flavor. Experiment with different types of bread for variety.
