Description

A crispy slice of toasted bread piled high with creamy cottage cheese and ripe avocado, seasoned to perfection.


Ingredients

  • 1 large egg
  • 2 slices of your favorite bread
  • 1/2 ripe avocado
  • 1/2 cup cottage cheese
  • 1/8 teaspoon paprika (optional)
  • 1/8 teaspoon salt (optional)
  • 1/8 teaspoon black pepper (optional)
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon sliced green onion (optional)
  • Everything but the bagel seasoning (optional)
  • 1 tablespoon hemp seeds (optional)

Instructions

  1. Hard boil your egg: Place the egg in a medium pot and cover with cold water. Bring the water to a boil, cover, and remove from heat, allowing it to sit for 9-12 minutes. Transfer to ice water to cool, then peel.
  2. Toast your bread using your preferred method until golden.
  3. In a medium bowl, combine the avocado, cottage cheese, and hard-boiled egg. Mash together until smooth, leaving some lumps for texture.
  4. Add paprika, salt, black pepper, Dijon mustard, and green onion, mixing until combined.
  5. Assemble your toast: Spread half of the mixture on each slice of bread. Top with everything but the bagel seasoning and hemp seeds.
  6. Enjoy immediately!

Notes

Use ripe avocados for the best texture and flavor. Experiment with different types of bread for variety.
