Description

Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a crockpot, combine the corn, onion, garlic, and broth. Season with chili powder, cumin, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the corn is tender and aromatic.
  3. About 30 minutes before serving, stir in the heavy cream or coconut milk.
  4. Serve hot, garnished with fresh cilantro and lime wedges.

Notes
