Description

A simple yet nourishing meal that combines lean ground beef and fresh cabbage with bold flavors. Perfect for weeknight dinners or casual gatherings.


Ingredients

  • 1 Tbsp avocado oil
  • 1 small yellow onion (chopped)
  • 1 small head cabbage (thinly sliced, about 46 cups)
  • 1 tsp sea salt (to taste)
  • 1 lb lean ground beef
  • 1 red bell pepper (chopped)
  • 5 cloves garlic (minced)
  • 2 Tbsp chili powder (to taste)
  • 1 (8-oz) can tomato sauce
  • 5 ounces baby spinach (optional)
  • Fresh limes (for serving)
  • Avocado (for serving)
  • Salsa, sour cream, and grated cheese (optional toppings)

Instructions

  1. Heat the avocado oil over medium-high heat in a large pot or skillet.
  2. Add the chopped onion and sauté for about 3 minutes until they start to sweat.
  3. Add the sliced cabbage and sea salt, cover, and let it soften for 3-5 minutes.
  4. Scoot the cabbage to one side and add the ground beef, browning it for 3-5 minutes.
  5. Stir in the bell pepper and garlic, then add the chili powder and tomato sauce, mixing well.
  6. If using, toss in the baby spinach and cover for another 3-4 minutes until wilted.
  7. Serve topped with garnishes such as grated cheese, green onions, avocado, salsa, and sour cream.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for 2-3 months.
