- 1 small yellow onion (chopped)
- 1 small head cabbage (thinly sliced, about 4–6 cups)
- 1 tsp sea salt (to taste)
- 1 lb lean ground beef
- 1 red bell pepper (chopped)
- 5 cloves garlic (minced)
- 2 Tbsp chili powder (to taste)
- 1 (8-oz) can tomato sauce
- 5 ounces baby spinach (optional)
- Fresh limes (for serving)
- Avocado (for serving)
- Salsa, sour cream, and grated cheese (optional toppings)
Instructions
- Heat the avocado oil over medium-high heat in a large pot or skillet.
- Add the chopped onion and sauté for about 3 minutes until they start to sweat.
- Add the sliced cabbage and sea salt, cover, and let it soften for 3-5 minutes.
- Scoot the cabbage to one side and add the ground beef, browning it for 3-5 minutes.
- Stir in the bell pepper and garlic, then add the chili powder and tomato sauce, mixing well.
- If using, toss in the baby spinach and cover for another 3-4 minutes until wilted.
- Serve topped with garnishes such as grated cheese, green onions, avocado, salsa, and sour cream.
Notes
Store leftovers in an airtight container for 3-4 days in the fridge or freeze for 2-3 months.
