James started his career in busy restaurant kitchens, learning discipline and precision. But he soon realized that while restaurant food could be indulgent, it wasn’t always practical or healthy for everyday life. A turning point came during a burnout phase in his mid-20s, when long days and unbalanced meals left him drained. This fueled his shift toward high-protein cooking, reinventing comfort foods with more nutrition without compromising flavor.
He learned the hard way that simplicity is the real secret to great cooking. A handful of quality ingredients combined with thoughtful technique can create meals that nourish and delight.
