- 1 pound boneless chicken breast
- 1 yellow onion, quartered
- 4 large garlic cloves, divided (2 whole, 2 minced)
- Extra virgin olive oil
- 2 carrots, peeled and thinly sliced into rounds
- 1 teaspoon coriander
- 1 teaspoon Aleppo pepper
- ½ teaspoon ground ginger
- ½ teaspoon turmeric
- 2 cups baby spinach
- ¼ cup chopped fresh dill
- ½ cup chopped fresh parsley
- Juice and zest of 2 lemons
Instructions
- In a large Dutch oven, combine the chicken with 6 cups of water. Season with salt and pepper. Add onion and 2 whole garlic cloves. Bring to boil, then simmer for 15-20 minutes.
- Remove chicken and shred it using forks. Strain the broth over a bowl, discarding solids.
- Wipe pot clean, add olive oil and warm over medium heat. Stir in minced garlic, carrots, and spices for 2 minutes.
- Return shredded chicken to pot, mix, and season with salt. Add broth and bring to boil.
- Reduce heat, cover partly, and cook for another 15-20 minutes until carrots are tender.
- Stir in spinach, herbs, and lemon juice/zest. Serve immediately.
Notes
Allow soup to sit for a few minutes after cooking to let flavors meld. Adjust seasoning before serving.
