- 2 salmon fillets
- 1 cup orzo pasta
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 2 cups vegetable or chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, warm the olive oil over medium heat. Season salmon fillets with salt and pepper, and place them in the skillet. Sear for about 4–5 minutes on each side until cooked through. Remove and let rest.
- In the same skillet, sprinkle in the orzo pasta and toast for 1–2 minutes, stirring gently.
- Pour in the vegetable or chicken broth, bring to a boil, then lower the heat, cover, and simmer for 10–12 minutes until orzo is tender.
- Stir in the lemon juice and zest, and gently return salmon to the skillet, warming for another minute.
- Sprinkle fresh parsley on top before serving.
Notes
Opt for wild-caught salmon for better flavor. Don’t rush the toasting of orzo for enhanced flavor.
