Description

A quick and nourishing Mediterranean baked cod dish, perfect for busy nights, with bright flavors and heart-healthy ingredients.


Ingredients

  • 2 lbs cod fillets
  • 1 and 1/2 tsp Kosher salt, divided
  • 1/4 tsp Freshly ground black pepper
  • 1/4 cup extra virgin olive oil, divided
  • 1 medium lemon, zested
  • 1 pint cherry or grape tomatoes, halved
  • 1 and 1/2 cups Kalamata olives, pitted and halved
  • 1/2 medium red onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 Tbsp red wine vinegar
  • 1 tsp dried oregano
  • Fresh parsley, for serving
  • Lemon wedges, for serving (optional)

Instructions

  1. Preheat the oven to 425°F (218°C). Pat the cod fillets dry and season with 1 tsp Kosher salt and 1/4 tsp black pepper. Place in a baking dish and drizzle with 2 Tbsp olive oil, then sprinkle with lemon zest.
  2. In a bowl, mix tomatoes, olives, red onion, and garlic. Drizzle with 2 Tbsp olive oil and 1 Tbsp red wine vinegar. Season with 1 tsp dried oregano and 1/2 tsp Kosher salt. Toss well and pour over the cod.
  3. Bake the cod for 15-18 minutes, or until the internal temperature reaches about 140°F (60°C). Serve immediately, garnished with fresh parsley and lemon wedges on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, seal properly and it can last up to 2 months.
