- 2 lbs cod fillets
- 1 and 1/2 tsp Kosher salt, divided
- 1/4 tsp Freshly ground black pepper
- 1/4 cup extra virgin olive oil, divided
- 1 medium lemon, zested
- 1 pint cherry or grape tomatoes, halved
- 1 and 1/2 cups Kalamata olives, pitted and halved
- 1/2 medium red onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 Tbsp red wine vinegar
- 1 tsp dried oregano
- Fresh parsley, for serving
- Lemon wedges, for serving (optional)
Instructions
- Preheat the oven to 425°F (218°C). Pat the cod fillets dry and season with 1 tsp Kosher salt and 1/4 tsp black pepper. Place in a baking dish and drizzle with 2 Tbsp olive oil, then sprinkle with lemon zest.
- In a bowl, mix tomatoes, olives, red onion, and garlic. Drizzle with 2 Tbsp olive oil and 1 Tbsp red wine vinegar. Season with 1 tsp dried oregano and 1/2 tsp Kosher salt. Toss well and pour over the cod.
- Bake the cod for 15-18 minutes, or until the internal temperature reaches about 140°F (60°C). Serve immediately, garnished with fresh parsley and lemon wedges on the side.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, seal properly and it can last up to 2 months.
