- 1/4 cup olive oil
- Juice of 2 lemons
- 1 tablespoon dried oregano

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper until combined.
- Add the baby potatoes to the bowl and toss until every potato is well coated.
- Spread the potatoes in a single layer on a rimmed baking sheet, cut side down if halved.
- Roast for 35 to 40 minutes, or until golden and tender when pierced with a fork.
- Remove from the oven, taste for salt, and toss with chopped fresh parsley before serving.
