Description

A delightful and easy lemon herb salmon recipe that’s perfect for busy weeknight dinners. Flaky and tender with fresh herbs and a zesty lemon flavor.


Ingredients

  • 1/2 cup olive oil
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons lemon zest, freshly grated
  • 3 cloves garlic, crushed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 pounds salmon
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small mixing bowl, whisk together olive oil, chopped basil, rosemary, parsley, lemon juice, lemon zest, crushed garlic, salt, and black pepper.
  3. Place the salmon skin side down in a baking dish and pour the herb mixture over it, coating it well.
  4. Arrange the lemon slices on top of the salmon.
  5. Bake for about 15 minutes or until the salmon is flaky and tender.

Notes

For an extra crisp finish, broil the salmon for the last minute of cooking. Don’t skip on the fresh herbs; they make a world of difference!
