Description

A delightful dish combining salmon and orzo in a creamy lemon garlic sauce, perfect for impressing family and friends.

Ingredients

Scale
  • 2 tbsp Olive oil
  • 1 tsp Dijon mustard
  • 1/2 of a Lemon juice
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Garlic powder
  • 3 Salmon portions
  • Salt & pepper
  • 6 cloves garlic
  • 1 tsp Fresh rosemary
  • 1 Chicken bouillon cube
  • 1 cup Orzo
  • 2.5 cup Water
  • 1/2 cup Heavy cream
  • 1/2 stick Butter
  • 1/4 cup Water
  • 1 tsp Red pepper flakes
  • 2 tbsp Fresh parsley
  • 1/2 cup Gouda
  • 1/4 cup Parmesan/Pecorino Romano

Instructions

  1. In a small bowl, combine olive oil, Dijon mustard, lemon juice, smoked paprika, and garlic powder. Mix well.
  2. Pour the marinade over salmon portions and season with salt and pepper. Set aside to marinate for at least 10 minutes.
  3. Heat a large pan over medium-high heat and add a bit of olive oil. Place the marinated salmon in the pan and cook until 80% cooked through, about 3-4 minutes per side. Remove from the pan and set aside.
  4. In the same pan, add 2 tbsp olive oil, then sauté minced garlic and chopped fresh rosemary for about 1 minute.
  5. Add the orzo to the pan and stir to coat in the mixture.
  6. Add the chicken bouillon cube and pour in the water. Stir to dissolve and bring to a simmer.
  7. Cover the pan and cook for 8-10 minutes, or until the orzo absorbs most of the liquid and is al dente.
  8. Stir in heavy cream, butter, red pepper flakes, and fresh parsley. Adjust consistency by adding extra water if needed, and stir in cheese.
  9. Return cooked salmon to the pan, squeeze half a lemon over it, cover, and let cook for another 1-2 minutes.
  10. Serve immediately, garnished with additional parsley and lemon if desired.

Notes

For the most tender salmon, aim for a slight under-cook. Pair with a light salad or crusty bread.
