- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Begin by slicing the beef into thin strips and chopping the bell peppers and onion.
- In a skillet, heat the olive oil over medium heat.
- Add the chopped onions and bell peppers, sautéing until they soften, about 5-7 minutes.
- Increase the heat to medium-high and add the sliced beef, seasoning lightly with salt and pepper. Cook until browned, about 3-5 minutes.
- Reduce the heat back to low and place the provolone slices over the beef mixture, allowing them to melt completely.
- Spoon the beef and cheese mixture onto each tortilla and roll them up tightly.
- In the same skillet, return the roll-ups seam-side down, cooking until golden brown on all sides, approximately 3-4 minutes total.
Notes
Try adding sautéed mushrooms for depth or jalapeño slices for a spicy kick. For a lighter version, substitute chicken or turkey for the beef.
