Description

Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Instructions

  1. Begin by slicing the beef into thin strips and chopping the bell peppers and onion.
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the chopped onions and bell peppers, sautéing until they soften, about 5-7 minutes.
  4. Increase the heat to medium-high and add the sliced beef, seasoning lightly with salt and pepper. Cook until browned, about 3-5 minutes.
  5. Reduce the heat back to low and place the provolone slices over the beef mixture, allowing them to melt completely.
  6. Spoon the beef and cheese mixture onto each tortilla and roll them up tightly.
  7. In the same skillet, return the roll-ups seam-side down, cooking until golden brown on all sides, approximately 3-4 minutes total.

Notes

Try adding sautéed mushrooms for depth or jalapeño slices for a spicy kick. For a lighter version, substitute chicken or turkey for the beef.
