Description

A hearty casserole with seasoned ground beef, cheese, and a comforting biscuit crust that is perfect for busy weeknights.


Ingredients

  • 2 pounds ground beef (browned and drained)
  • 1 ounce packet taco seasoning
  • 16 ounce can large biscuits
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounces cheddar cheese (shredded and divided)
  • 1 medium onion (halved and sliced)
  • 2 medium tomatoes (sliced)
  • 1 medium red bell pepper (halved and sliced)
  • 4 ounces canned sliced jalapeño peppers (optional)
  • Salt and black pepper to taste
  • 1 tablespoon vegetable oil
  • Chopped cilantro or green onion for garnish (optional)

Instructions

  1. Preheat oven to 350°F and prepare a 13×9 glass baking dish with nonstick spray.
  2. Arrange biscuits in the pan and press to form a crust.
  3. Bake the biscuit crust for 12 to 15 minutes until light brown.
  4. In a skillet, heat vegetable oil and sauté onions until translucent.
  5. Add ground beef and brown, draining excess fat.
  6. Stir in taco seasoning and water, simmer until reduced.
  7. In a bowl, mix sour cream, mayonnaise, half of the cheddar, and reserved onions.
  8. Sauté remaining onions with red bell pepper until softened.
  9. Layer the casserole: beef, tomatoes, onion and pepper mixture, jalapeños, sour cream mixture, and top with remaining cheddar.
  10. Bake uncovered for 30 to 40 minutes until edges are browned and cheese is bubbling.
  11. Let rest for 8 to 10 minutes before slicing.

Notes

For best results, let the casserole cool slightly before serving. Can be paired with a salad for a lighter meal.
