Description

A hearty and comforting soup packed with protein from lentils and flavorful Italian sausage, finished with fresh spinach and bacon.


Ingredients

  • 1 pound Italian sausage, good quality
  • 1 cup lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups spinach
  • 4 slices bacon, cooked and crumbled
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the Italian sausage until cooked through, then drain excess fat and transfer to the crockpot.
  2. Add the lentils, onion, carrots, celery, garlic, chicken broth, diced tomatoes, and Italian seasoning to the crockpot; stir to combine and season with salt and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until lentils are tender.
  4. About 10 minutes before serving, stir in the spinach and crumbled bacon.
  5. Serve hot and enjoy, finishing with a squeeze of lemon or a drizzle of olive oil.

Notes

Refrigerate leftovers for up to 4 days or freeze for up to 3 months. Reheat gently, adding liquid if needed.
