  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a separate large bowl, beat the softened butter with the granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing in the vanilla extract.
  5. Fold in the dry mixture until just combined.
  6. Fold in the grated apples and walnuts if using.
  7. Pour the batter into the prepared baking pan and spread it out evenly.
  8. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  9. Let the cake cool completely in the pan on a wire rack.
  10. For frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla.
  11. Spread the cream cheese frosting over the cooled cake, slice, and serve.

Notes

For extra moistness, add a splash of unsweetened applesauce to the batter. You can also toast the walnuts for deeper flavor.
