Ingredients

  • 2 large sweet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds.
  3. Toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated in a large bowl.
  4. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25 to 30 minutes, turning halfway through, until they are tender and golden brown.
  6. Remove from the oven and allow to cool slightly.
  7. Arrange the roasted sweet potato rounds on a serving platter and sprinkle crumbled feta cheese over the top.
  8. Drizzle with honey and garnish with freshly chopped parsley; serve warm or at room temperature.
