Description

A quick and delicious dish featuring juicy chicken thighs cooked with rice in a sweet and smoky honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear chicken for 3–4 minutes per side until golden brown, then remove and set aside.
  3. In a bowl, mix BBQ sauce, honey, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes, then add chicken broth and half the sauce, stirring to combine.
  5. Return the chicken to the pan, poor the remaining sauce over the top, and cover.
  6. Simmer on low heat for 15 minutes.
  7. Add mixed vegetables, cover, and cook for 5 more minutes, until rice is tender and chicken is cooked through.
  8. Let sit for 5 minutes and garnish with green onions before serving.

Notes

For extra flavor, try using different BBQ sauces or adding spices as per your preference.
