Description

Delicious and protein-packed homemade blueberry muffins, perfect for busy mornings or a quick snack.


Ingredients

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Preheat your oven to 360°F (180°C).
  2. In a mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth.
  3. Add the plain flour, protein powder, baking powder, and baking soda. Stir gently until just combined.
  4. Fold in fresh blueberries carefully.
  5. Spoon the batter into a lined muffin pan, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

For extra flavor, add lemon zest or cinnamon to the batter. Store in an airtight container for up to five days in the fridge.
