Description

A creamy and nutritious casserole filled with broccoli, mushrooms, and rich cheese flavor from cashews—perfect for the whole family.


Ingredients

Scale
  • 1/2 cup raw cashews
  • 1 cup plant-based milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons tapioca starch
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder (optional)
  • 1/2 teaspoon salt
  • 2 cups cooked brown rice
  • 2 cups broccoli florets
  • 68 brown button mushrooms (quartered)

Instructions

  1. Preheat oven to 200°C / 400°F.
  2. Make the cheese sauce by blending cashews, plant-based milk, nutritional yeast, tapioca starch, onion powder, garlic powder, chili powder, and salt until smooth.
  3. In a 9 x 13 inch baking dish, combine the broccoli, rice, and mushrooms.
  4. Pour the cheese sauce over the veggie mix and toss until everything is well combined.
  5. Bake for 25-35 minutes, until the veggies are softened and the top is golden.
  6. Serve and enjoy, garnished with fresh herbs if desired.

Notes

For creaminess, add a splash of plant-based milk if the mixture gets too thick while baking.
