- Olive oil
- 1 packet jasmine rice
- ¼ cup rice wine vinegar (for the pickle)
- 1 bunch Asian greens (bok choy or baby spinach)
- 1 packet chicken breast
- 2 sachets sesame seeds
- 1 packet mayonnaise
- 2 tsp sesame oil (or any vegetable oil)
- 1.5 tsp soy sauce
- 1 tsp sugar
- 1 tsp rice wine vinegar (for the dressing)
- 1 tub sweet chilli sauce
- 1 packet crushed peanuts
- 2 cloves garlic
- 20 g butter
- 1.25 cups water
- ¼ tsp salt
- ½ unit red onion
- 1 unit capsicum (bell pepper)
- 1 unit cucumber
Instructions
- Finely chop the garlic.
- In a saucepan, melt the butter over medium heat.
- Add garlic and cook until fragrant, about 1 minute.
- Add water, jasmine rice, and salt; bring to a boil and cover, reducing heat to low.
- Cook for 12 minutes; then let sit covered for 10-15 minutes.
- Thinly slice the red onion and combine it with ¼ cup rice wine vinegar, salt, and sugar in a bowl to pickle.
- Let the onion sit in the pickling liquid.
- Chop capsicum and Asian greens, slice cucumber.
- Cut chicken breast into strips.
- Toast sesame seeds in a frying pan until golden, then mix with mayonnaise, sesame oil, soy sauce, sugar, and rice wine vinegar.
- Sauté capsicum and Asian greens in olive oil until tender.
- Cook chicken in olive oil until done, then stir in sweet chilli sauce.
- Drain pickled onion.
- Serve rice topped with sweet chilli chicken, veggies, drizzle with sesame dressing, and sprinkle with peanuts and pickled onion.
Notes
For extra crunch, sprinkle extra toasted sesame seeds before serving. Always taste as you go for balanced flavor.
