Description
A comforting and nutritious dish made with cabbage leaves stuffed with a savory filling of brown rice, ground meat, and herbs, simmered in a delicious tomato sauce.

- 1 small head cabbage, cored and chopped into large pieces
- Kosher salt
- 3/4 cup uncooked brown rice or 1 1/2 cups cooked brown rice
- 2 tablespoons extra virgin olive oil
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1 pound lean ground beef or ground turkey
- Freshly ground black pepper
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh dill
- 1 teaspoon ground allspice
- 1 teaspoon ground cumin
- 1 15-ounce can diced tomatoes
- 1 15-ounce can tomato sauce
- 1 cup water
Instructions
- Blanch the cabbage in boiling water for 5 to 7 minutes until bright green and tender. Drain and return the water to boil.
- Cook the uncooked brown rice in salted boiling water for about 30 minutes until tender. Drain and set aside.
- In a pot, heat olive oil and cook onions until lightly browned. Add garlic and ground meat, cooking until browned. Drain any excess fat.
- Add the cabbage, cooked rice, herbs, and spices to the pot, season with salt and pepper, and stir to combine.
- Add diced tomatoes, tomato sauce, and water. Bring to a boil, then reduce heat, cover, and simmer for 15 to 20 minutes until rice has absorbed some of the liquid.
- Serve in bowls, drizzled with extra virgin olive oil, and let sit for a few minutes before serving.
Notes
Garnish with additional parsley or dill for color and freshness. Pair with Greek yogurt for creaminess and serve with crusty bread or a light green salad.
