Ingredients

  • 1/2 cup part-skim ricotta
  • 1 teaspoon lemon zest
  • 2 slices whole grain bread
  • 1 large avocado
  • 2 large eggs
  • 1/4 cup kale microgreens
  • 1 teaspoon everything bagel spice

Instructions

  1. Mix the lemon zest and ricotta together in a small bowl and set aside.
  2. Toast the slices of whole grain bread to desired crispiness.
  3. Slice open the avocado, discard the pit, and mash it in a bowl to your preferred consistency.
  4. Coat a medium skillet with coconut cooking spray. Crack the eggs into the skillet and cook for 2-4 minutes until desired doneness.
  5. Assemble by spreading half of the ricotta mixture on each slice of bread, adding avocado, eggs, kale microgreens, and sprinkling with everything bagel spice.
