Description

Enjoy flavorful Mediterranean Chicken Pitas filled with juicy grilled chicken, fresh veggies, and creamy hummus, perfect for a healthy meal.


Ingredients

  • 4 Ezekial Prophet’s Pocket Bread
  • 2/3 cup Sabra Roasted Red Pepper hummus
  • 1/2 cup plain non-fat Greek yogurt
  • 2 medium roma tomatoes, diced
  • 1 small cucumber, chopped
  • 1 lb chicken breast, raw
  • 3 tbsp Homemade Brine Mix
  • 1 tsp olive oil
  • 1/2 tsp Oh My Spice! Lemon Pepper Seasoning
  • 1/2 tsp dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Bring 2 cups water to a boil.
  2. Add brine mix and stir until dissolved.
  3. Pour the brine over ice in a flat-bottomed resealable container.
  4. Add chicken, then pour additional water until the chicken is submerged.
  5. Brine for at least 5 hours or up to 12 hours.
  6. Remove the chicken from the brine and rinse it with cold water.
  7. Pat the chicken dry on a paper towel, then pound the thicker end of each breast until even thickness across.
  8. Rub the chicken with olive oil until evenly coated.
  9. Season with salt, pepper, rosemary, and Oh My Spice! seasoning.
  10. Preheat the grill to 400 degrees F.
  11. Grill the chicken for 6 minutes on the first side, then flip and grill for 4-5 minutes on the other side until it reaches 160 degrees F in the thickest part of the breast.
  12. Allow the chicken to rest for 3-5 minutes before chopping.
  13. Assemble: Cut the pitas in half. On each half, spread hummus on one side and Greek yogurt on the other.
  14. Add cucumber, tomato, and chicken. Serve immediately.

Notes

Pounding the chicken for even thickness promotes even cooking, ensuring you don’t end up with dry bits.
