Description

A hearty one-pan bake with ground beef, potatoes, and gooey Colby Jack cheese, perfect for a quick weeknight meal.


Ingredients

Scale
  • 1 pound lean ground beef (90/10 or 85/15)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium yellow potatoes (sliced thin)
  • 8 oz Colby Jack cheese (freshly grated)
  • 10 oz cream of chicken soup
  • 10 oz cream of celery soup
  • 1/3 cup milk
  • 1/2 teaspoon all-purpose seasoning
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 cup French’s fried onions

Instructions

  1. Preheat oven to 350°F.
  2. Add ground beef to a lightly greased cast iron skillet and break up to evenly layer.
  3. Season with salt and pepper.
  4. Peel and slice potatoes, then layer on top of the ground beef.
  5. Sprinkle grated cheese on top of the potatoes.
  6. In a mixing bowl, combine cream of chicken soup, cream of celery soup, milk, all-purpose seasoning, and Worcestershire sauce. Mix well.
  7. Spoon the sauce over the cheese layer and smooth out evenly.
  8. Cover with aluminum foil tightly and bake for 90 minutes.
  9. Remove foil and sprinkle fried onions evenly over the top.
  10. Broil for 2–3 minutes until golden brown.
  11. Garnish with green onions or parsley and let rest for 10 minutes before serving.

Notes

For a lighter version, serve with a green salad or steamed vegetables. You can store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
